Overnight Oats Muesli

Everyone knows oats are healthy for the body—they’re full of both soluble and insoluble fiber which help cleanse the body and keep the digestive system functioning well. The beta-glucan soluble fiber in oats can lower cholesterol and regulate blood sugar levels, and the phytoestrogen helps to keep hormones balanced. The oats, paired with fruit and nuts, makes for a highly-nutritious superfood breakfast!
This recipe is gourmet and almost extravagant but it takes only a little preparation. All you need to do is soak rolled oats in water overnight, then stir in some delicious goodies—super easy! Almost all the ingredients are pantry ingredients, too, which means you can just keep them on hand and whip this up with little or no grocery shopping (love that!).
Try having a breakfast of oats and fruit—it makes you feel fantastic during the day! It might possibly be the very best breakfast for the body. You’ll find yourself feeling satisfied for a long time, with sustained energy and feeling quite happy.
Makes 1 serving.
- 1 cup rolled oats (get gluten-free oats as I do if you wish)
- 1 apple
- 3 pitted dates
- 1 tablespoon chopped walnuts, hazelnuts, almonds, or pistachios
- 1 tablespoon dried goji berries
- 3 tablespoons yogurt (I use vanilla flavor)
- fresh fruit, optional
- raw honey, optional
Place the oats in a bowl and add just enough water to cover them. Soak overnight, refrigeration not necessary.
In the morning, grate the apple, chop the dates, and add to the soaked oats along with the chopped nuts and goji berries. Add enough yogurt to bind all the ingredients, plus a little more to taste.
Top with fresh fruit and raw honey, if desired.
