Sliced Peaches with Whipped Ricotta

Wow, this dessert is amazing!! When I made this the first time, I was surprised by how delicious it was.
All you need to do is slice up some amazing fruit, whip up the cheese and honey mixture, and sprinkle on the nuts. Mmmmmmmm! If you’re like me and love eating pretty much all the fresh fruit you can get your hands on, you’re going to love this treat.
This time I made it I used luscious summer peaches and Rainier cherries, but other fresh fruits can be used such as berries, apricots, figs, pears, or apples! And you can double the cheese recipe if you like, to use the extra on breakfast toast in place of butter and jam.
Makes 1 serving.
Ingredients
- 2 tsp pistachio nuts
- ⅓ cup whole-milk ricotta cheese, or mascarpone cheese
- 2 tsp raw honey
- 2 ripe peaches
Directions
Preheat an oven to 325°F. Spread the pistachios in a pie pan and place in the oven until fragrant and beginning to brown, 8-10 minutes. Chop and set aside.
In a medium bowl, combine the ricotta and honey. Use a hand mixer to beat together until completely smooth and creamy. (You can also mix these in a blender instead, if you wish.)
Pit and slice the peach and arrange the slices on a plate, leaving room for the cheese. Spoon the whipped cheese onto the plate and top with the toasted nuts.
