Strawberry, Fennel, and Goat Cheese Salad
Strawberries, like other berries, are bursting with antioxidants (which keep damaging free radicals at bay!). This is a delicious, fresh salad full of raw ingredients, plus a bit of cheese.
Have you tried fennel? Its flavor is licorice-y and it’s one of my favorite veggies, especially for salads. Make this salad in the spring and early summer when the most amazing strawberries abound.

My version reduces the amount of oil and cheese, per my usual eating recommendations! Minimize the fat, while still enjoying some for tons of flavor:
- 2 cups strawberries, hulls removed and sliced
- 1 large fennel bulb, finely sliced
- 1 cucumber, finely sliced
- 1/2 small goat cheese log, cut into small pieces
- 1 tsp olive oil
- 2 tbsp white wine vinegar
- 2 tsp Dijon mustard
- 1 tsp honey
- sea salt
- black pepper
Combine strawberries, fennel, and cucumber in a serving bowl. Dot the pieces of goat cheese over the salad. In a separate bowl, combine the olive oil, white wine vinegar, Dijon mustard, and honey. Add sea salt and pepper to taste. Pour the dressing over the salad and serve immediately.
